Daily Ramadan Recipe #11 – Poulet Basquaise or Basque chicken

A specialty from the south of France, Poulet Basquaise combines a mix of flavors that will explode in your mouth. Ideal as a Ramadan recipe, it’s easy, cheap and quick to make, yet healthy, filling, and delicious as you would want your iftar to be.

Preparation 20 minutes

Ingredients for 6 people:

1 chicken cut into 6 pieces.
1kg of tomatoes
700 grams of green and red peppers, sliced lenghtwise
3 thinly sliced onions
3 cloves of garlic
1 bouquet of several aromatic herbs such as Provence herbs, Basil, thyme, parsley, bay leaves
olive oil
pepper and salt

Directions:

  1. Heat 4 tablespoons of olive oil in a big pan
  2. Brown the onions, the pressed garlic and the peppers
  3. Leave it on the heat for 5 minutes.
  4. Wash, peel and cut tomatoes into pieces
  5. Add them to the pan
  6. Add a small amount of salt and pepper
  7. Put the lid on the pan and leave it simmering for 20 minutes
  8. In another pan heat olive oil and brown chicken pieces that have been salted and peppered
  9. Add the vegetables and cover with a lid
  10. Add the aromatic herb bouquet
  11. Leave on the heat for 35 minutes



Enjoy with rice or pasta!
